Ingredients
- 1 lb elbow macaroni (cooked al dente)

- 2 cups milk
- 1/4 cup butter
- 1/4 cup flour
- Panko breadcrumbs
Step-by-Step
- Make the cheese sauce Melt butter in a skillet, whisk in flour, slowly add milk to make a cheese sauce, then stir in most of the cheese until melted. Mix with macaroni.
- Prepare for smoking Transfer to a cast-iron skillet or foil pan. Top with the remaining cheese and panko breadcrumbs.
- Start smoking Set the smoker above 260°F (127°C) briefly for smoke, then lower to 225°F.
- Finish smoking Smoke for about 1 hour until the top is golden, bubbly, and crisp.
BBQ Tip
For the best texture, let the macaroni and cheese rest for a few minutes before serving so the cheese sauce can set slightly.
