Ingredients
- 4 lbs skinless pork belly (cut into 1-inch cubes)
- 1/2 cup sweet rub
- 1/2 cup butter
- 1/2 cup honey
- 3/4 cup BBQ sauce
Step-by-Step
- Season the pork belly Coat all sides of the pork belly cubes with sweet rub.
- Start smoking Set the smoker to 260°F (127°C) or above to start smoke, then lower to 250°F for slow cooking.
- Smoke the pork belly Place the cubes flat on the rack and smoke for 2–3 hours until a dark mahogany crust forms.
- Add the glaze Transfer to an aluminum pan, add butter, honey, and BBQ sauce, then cover tightly with foil.
- Finish smoking Continue smoking for 1.5 hours, then uncover and smoke for another 10–15 mins until the glaze thickens and the pork belly is melt-in-your-mouth tender.
BBQ Tip
For the best texture, make sure the pork belly develops a deep mahogany crust before transferring it to the pan and adding the glaze.
